Auguste Escoffier had a hap­py and fruit­ful life. One must already have a lit­tle idea of cook­ing to real­ize the moder­ni­ty of his Culinary Guide, which may seem, at first glance, a bit off-putting: a col­lec­tion of recipes sum­ma­rized in a few lines, with­out the pho­tos or step-by-step we are used to.

With his Epicure's din­ners, which were held simul­ta­ne­ous­ly in many restau­rants around the world, he even invent­ed the "fran­chise": each restau­rant received the menu in a sealed enve­lope, ten days before the date of the din­ner, so that every­where at once, all the guests dined "à l'Escoffier".
